Keto Frittata with Sausage

– Hey guys, today on
Low Carb with Jennifer, I’m gonna make a keto
frittata with sausage and some green bell peppers and some onions and some cheese, and it’s gonna be super delicious. And I’ve already started, so watch along. (upbeat music) So, I’ve already started. I’ve got my sausage cooking here. And I’m gonna go ahead
and add in the onion. And, of course, you know
me, I use frozen onion; it’s my favorite shortcut ingredient, because I hate chopping
onion, they make me cry. I’m also gonna add in
the green bell pepper, and that is frozen, as well. So, while this is cooking, I’ve got my eggs here I’ve
already cracked into this bowl, and I’ve got my oven
preheating to 425 degrees. And I’m going to go ahead and mix up my eggs. I’ve got eight eggs. And some heavy cream. I’m gonna mix all this up. So, I’m gonna add 1/2
teaspoon of salt to my eggs, and I’m gonna add in some
freshly cracked black pepper. And, of course, you can add as much black pepper as you want. I’m gonna keep beating
these until they’re smooth. And that looks good. So, our mixture over here of sausage and onion and
peppers is looking good. And what I really like about
using frozen vegetables is they take, they’re not as,
don’t take as long to cook. This recipe is also really good with chopped fresh parsley, a handful of fresh parsley thrown into the eggs right
after we put it in the skillet. But I don’t have any, so I
can’t put any in there today. Okay, before I pour in the eggs, I’m gonna stir in some Parmesan cheese. I’m gonna spread the sausage
out into an even layer. And now, we can pour in the eggs. Our hot skillet is gonna
cook the eggs a little bit, and then we’re gonna finish
cooking it in the oven for about 20 minutes. You just wanna make sure the eggs are set. And if your sausage was really
lean, like this one was, if you, you might wanna spray the pan with a
little bit of cooking spray before you put the sausage in the pan, or you could shift the sausage to the side and put the cooking spray in there. I put it in there, actually, before I put the sausage in there. If you don’t, it might stick, since this is a very lean sausage. But this is ready for the oven. Okay, our frittata is perfectly

    I don't finish mine in the oven, I keep it in my cast iron pan and cover it with a lid. It fluffs up like a soufflΓ© most times, and is simply scrummy!
